SOIL TYPE: Deep and heavy soil type. Silty and clayey with different parts of sand
WINEMAKING: The name Doss refers to the neck near the wine-growing town of Cortacia on the wine road which was often under water and is therefore also called Little Venice, the hill formed by these floods is today the most important wine-growing area for Chardonnay & Pinot Gray and in contrast with the rest of the South Tyrolean plain, due to the different soil structure not cultivated for fruit growing but almost exclusively for viticulture. The image on the label shows one of the oldest vines of South Tyrol, traditionally planted on important occasions. This grape variety is 270 years old.Harvested by hand, alcoholic fermentation in steel, maturation on the noble lees for 6 months.
TASTING NOTES: Straw yellow wine with light green reflections. The scent is delicate and fruity with notes of ripe exotic fruit, typical for this grape variety. In the mouth it has a good body and a clean taste, slightly spicy with a fresh and lively acidity.
FOOD PAIRINGS: Ideal with courses based on fish, vegetables and white meats. It also match dishes from the oriental kitchen as Wok, Pad Thai and spicy noodles.
