WINEMAKING: Since 1989, the “Burgum Novum” label has brought together the most prestigious wines from the company. These are the result of an intense work that begins in a meticulous preparation in every detail starting from the vineyard up to the vinification. The grapes harvested come from the best South Tyrolean vineyards. Picked by hand, cold mazeratione for 6-8 hours, alcoholic fermentation and malolatic fermentation in barrique, aging for 18 months in barrique. 12 months of aging in steel followed by 6 months in bottle.
TASTING NOTES: To the eye, this wine is striking for its bright straw yellow color in which green flashes blend, while in its bouquet the notes of hazelnut, ripe summer fruit and tropical fruits are clearly recognizable, which are also accompanied by slight veins of toasted aromas and vanilla. On the palate it is robust, full and well proportioned while the aftertaste is elegant, round.
FOOD PAIRINGS: Recommended pairing with mixed seafood with raw shrimp and prawns, vegetable risotto, creams based on root vegetables (potato or celery soup), dishes with not too aromatic cheeses (for example soft robiola) such as cheese dumplings or a cheese-flavored pasta. It also goes well with salt-crusted sea bass or veal with tuna sauce. It should be served in a tall glass and tapered at a maximum temperature of 12 ° C.
