SOIL TYPE: Clayey-marly, of Eocene origin
WINEMAKING: Soft pressing, cleaning of the must and fermentation in steel at a controlled temperature between 18 and 20 degrees. At the end a transfer is made, and the wine is kept on the lees clean until November. A further racking follows and the wine stays on the lees until March.
TASTING NOTES: Has effusive aromas of apple blossoms and quince with underpinnings of bitter almonds. It is intense with rich and refreshing flavours.
