GRAPES: 100% Favorita
SOIL TYPE: Mainly limestone soil, with a high presence of quartz sand and very fine limestone, which alternate with compact layers of gray sandstone.
WINEMAKING: Favorita is counted among the native Piedmontese vines even if it has different similarities with the Ligurian Vermentino. Already in 1676 there are documents attesting to its cultivation in Piedmont. Immediately after harvesting, the grapes are brought to cold rooms where they undergo a temperature drop of up to 6 ° C, which is essential for preserving the perfumes during pressing. Cold maceration in contact with the skins for 4 hours. Fermentation in steel at 16 ° C, aging on fine lees for at least 5 months.
TASTING NOTES: It has a beautiful straw yellow color with golden reflections and aromas of yellow flowers, apple, apricot and freshly mown grass. The taste is fresh, delicate and pleasantly dry.
FOOD PAIRINGS: For its delicacy it is perfect for aperitifs and conviviality, or as a companion for appetizers and light dishes.
