REGION: Recioto della Valpolicella DOCG – Veneto
GRAPES: Corvina, Corvinone, Rondinella, Oseleta and Croatina, only own grapes, hand selected from Cru Monte La Parte.
SOIL TYPE: Calcareous, tufaceous.
WINEMAKING: The fully matured grapes are selected and harvested in small crates of 4/5 kg. The grapes are then left in fruttaio (drying room) for over four months resulting of a weight loss up to 50%.The vinification is carried out in stainless steel tank with daily “remontage”. The spontaneous fermentation can last up to three months and is stopped naturally. The wine is refined in 5hl French oak barrels for at least 3 years and bottled without filtration. Spend and extra year in bottle before being released.
TASTING NOTES: Red ruby colour with violet reflections. Nose reveals notes of ripe fruit such as black cherry, raspberry and plum, with hints of spices. Full-bodied, round and elegant sweetness. Good balance between acidity and tannins. An ever presence of Morello cherries in every taste culminate in a dense, fruity and persistent finale.
FOOD PAIRINGS: Full bodied sweet wine. Perfect match to pastries (cantucci, sbrisolona) or Panettone. Could also accompany Blue cheese or bittersweet chocolate. Often referred as meditation wine.
