WINEMAKING: Spontaneous fermentation from “pied de cuve”with no added sulphites in concrete vats. Aged for 3 months in concrete and further 3 months in bottle.
TASTING NOTES: Mimosa yellow color. Scents of cedar. Taste of orange and mint, olive oil. Soothing, inviting.
FOOD PAIRINGS: It pairs well with grilled vegetables, salads, seafood and white meats. Ideal for an aperitif with friends.
