WINEMAKING: Spontaneous fermentation from “pied de cuve”with no added sulphites in concrete vats. Macerated for 8 days in concrete vats. Aged for 1 year in concrete vats.
TASTING NOTES: Full bodied, rich. Notes of pepper, chocolate, tobacco and vanilla. Elegant and fresh but still bold and powerful. Complex tannins.
FOOD PAIRINGS: Red meats, strong cheeses and savoury pasta courses.
