WINEMAKING: Spontaneous fermentation from “pied de cuve”with no added sulphites in concrete vats. Macerated for 10 days in concrete vats. Aged for 1 year in big rover “Botti” (only the 50%). Matured and refined for 1 year in the bottle.
TASTING NOTES: Scents of juniper and red carnation. Taste of dark chocolate and curry. Feelings of bluebarries, calls for another glass.
FOOD PAIRINGS: Red meats, strong cheeses and savoury pasta courses.
