SOIL TYPE: Sandy / clayey grain size
WINEMAKING: Spontaneous fermentation from “pied de cuve”with no added sulphites in concrete vats. Macerated for 10 days in concrete vats. Aged for 1 year in big rover “Botti” (only the 50%). Matured and refined for 1 year in the bottle.
TASTING NOTES: Scents of juniper and red carnation. Taste of dark chocolate and curry. Feelings of bluebarries, calls for another glass. Liquorice and tertiary aromas in development such as dates and raisins.
FOOD PAIRINGS: Red meats, strong cheeses and savoury pasta courses, blue cheese.
