WINEMAKING: The high altitude of Sauvignon Raif (600 m) and the favorable thermal fluctuations are decisive for this aromatic grape variety. The evening winds lower the temperature and thus guarantee an optimal development of the aromatics. Harvested by hand, cold mazeration for 12 hours, thoughtful pressing, alcoholic fermentation in steel, aging on the noble lees for 6 months.
TASTING NOTES: Bright yellow color softened by greenish reflections, this wine knows how to seduce the nose with its intense and varied bouquet with hints of nettle, elderflower, green pepper, sage and mint. It is a mineral wine, elegant, pleasantly savory on the tongue and ambitious in the aftertaste.
FOOD PAIRINGS: Pasta with pesto, because this wine loves aromatic herbs. It loves lemon and citrus fruits in general. Sauvignon is also perfect with fresh cheeses such as ricotta, mozzarella and goat cheese. It goes well with seafood and gilled vegetables too.
